| Abstract: | Práce se zabývá možností přípravy extraktu amylasy ze zeleného sladu do zásoby, studuje měnící se aktivitu amylasy ze zeleného sladu v různých etapách klíčení a rozdíl mezi aktivitami slinné amylasy a amylasy z ječmenného zrna. Práce se rovněž zabývá možností přípravy extraktu enzymu peroxidasy do zásoby pro další využití. Součástí práce je rovněž základní pohled na problematiku enzymatických reakcí, uváděných v literatuře. |
| Abstract in different language: | This work explores the possibility of preparing amylase extracts from green malt in stock, the work studies the changing activity of green malt amylase at various stages of germination and the difference between the salivary amylase activity and the activity of amylase from barley grain. The work also deals with the possibility of preparing an extract of the enzyme peroxidase in stock for another use. A part of this work is also a fundamental view on the issue of enzymatic reactions reported in the literature. |
