| Abstract: | Cílem této bakalářské práce je představit nové poznatky ve francouzské gastronomii, a to komparací dostupných zdrojů o aktuálních trendech ve francouzské kuchyni a poznatků získaných z vlastních výzkumů. V teoretické části se tato práce dále zabývá charakteristikou francouzské kuchyně, jejími dějinami a zejména popisem kulinářského regionu Provence. Praktickou část tvoří analýza jídelních lístků. Součástí jsou i glosáře pro české čtenáře. Přílohy tematicky vhodně doplňují celou bakalářskou práci. Obsahují osobité fotografie z Francouzského trhu na Kampě, jakož i rozhovor s majitelem francouzského Bistra a Table!, panem Jeanem-Charlesem Bergerem. |
| Abstract in different language: | The aim of this bachelor thesis is to present new discoveries in French gastronomy by comparing the available sources on current trends in French cuisine and the knowledge gained from own research. In the theoretical part, this thesis also deals with the characteristics of French cuisine, its history and especially the description of the culinary region of Provence. The practical part consists of an analysis of menus. Glossaries for Czech readers are also included. The annexes thematically complete the whole bachelor thesis. They include personal photographs from the French market in Kampa, as well as an interview with the owner of the French Bistro a Table!, Mr. Jean-Charles Berger. |
